Baked Beetroot with Balsamic vinegar

Baked Beetroot with Balsamic vinegar

Ingredients

5-6 medium beetroot

4 cloves garlic unpeeled, squashed (optional)

sprig of rosemary

salt & pepper

1/4 cup balsamic vinegar

1/3 cup olive oil

Preparation

Preheat oven to 180 degrees C.

Put about 40 cm on foil into a oven dish to cook beetroot in.

Wash or peel beetroot and chop into large chunks.  Place into dish and add garlic, rosemary, salt and pepper.

Add vinegar and oil and fold foil together to seal at top.

Place in oven and cook for around 30-40 mins until tender.
