
Ingredients
1 cup washed quinoa
1 3/4 cups vegetable stock or water
1 red pepper sliced
1 small red onion finely chopped
lettuce greens
beetroot (optional)
Preparation
Cook quinoa by absorption method, bring stock to boil add quinoa and turn off heat and cover. leave for about 15 mins.
Lightly fry onion and add sliced red pepper to soften. Mix through quinoa and add a few lettuce greens or spinach. Can be served hot or cold.
Add 1 serve of protein (salmon goes nicely) for a great lunch or dinner.
Tip: Leftover quinoa is nice next day, can be added to any veg / salad dish
