Arabic Smoked Salmon Salad

Ingredients
- 1 Red onion, peeled & sliced into rings
- ½cup Dukkah mix, found in supermarket deli’s
- 3 Tomatoes, cut into large dice
- 1 Telegraph cucumber, seeded & diced
- ¼cup Flat leaf parsley, roughly chopped
- ¼cup Mint, roughly chopped
- 500g pkt smoked salmon
- 1clove Garlic, crushed
- ½Tbsp Balsamic vinegar
- 30ml Olivado zest oil
- 30ml Olivado avocado oil
- handful Pita or Bagel crisps
- 12 Small crisp cos lettuce leaves
Preparation
- In a mixing bowl, coat the red onion rings in dukkah
- In another mixing bowl, toss together the tomatoes, cucumber, parsley and mint
- Break the salmon up into pieces, fold through the salad with the garlic, balsamic vinegar, oils and crisps
- On a platter, lie out the cos lettuce and scatter over the salad. Garnish with the dukkah onion rings and serve.
